Made in the traditional Methode Champenoise method.  Only free-run fraction juice from the grapes grown in the Whitfield Estate vineyard was used for this wine. The base wine was partially aged in old oak barrels to promote complexity and added pre-lees contact.  The wine has 15 months of ageing on yeast lees, which helps impart an intriguing Brioche character to the lively fresh citrus aromatics.  In typical cool climate - Blanc de Blanc style the wine displays a riveting acid backbone which these complexing flavours are entwined around.
